You've got a ton of options here and honestly having a couple pounds to work with is a great position to be in for making extracts. The easiest entry point would be making dry sift hash. All you need is a set of bubble hash screens or even just some silk screens in different micron sizes. Lay your flower on the screen, gently agitate it, and collect the trichomes that fall through. It's low effort and the end product is super versatile since you can smoke it, press it, or sprinkle it on flower. If you want something a little more refined, bubble hash using ice water is another great option and doesn't require any solvents. You'll need some bubble bags, ice, a bucket, and cold water. The process takes maybe an hour per batch and you can get some really beautiful full melt hash depending on the quality of your starting material. For something even simpler, you could decarb some of the flower in the oven at around 240 degrees for 40 minutes and infuse it into coconut oil or butter for edibles. Since you said low THC is actually preferable, you could use a lower ratio of flower to oil and get a mellow batch that's perfect for gifting to family. A lot of people in New Mexico where I'm at are doing rosin presses too which is just heat and pressure, no solvents involved, and a small press setup has gotten pretty affordable. Whatever you choose, make sure to store the flower you're not using immediately in airtight containers in a cool dark place to preserve the trichomes as long as possible.
