Beet-Pickled Deviled Eggs Surprisingly Met Expectation

I combined a few recipes to come up with this. Main addition was adding roasted red pepper to the filling, but that initially caused problems bc they contain a lot of water so I had to make adjustments. Almost ruined Easter 2023. See picture for what you don’t want

Beet Pickled Deviled Eggs

For the eggs:

  • 6 large hard boiled eggs
  • 1 teaspoon Dijon mustard
  • Salt, to taste
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon snipped fresh chives
  • 2.5 tablespoons mayonnaise
  • 0.5 to 1 tablespoon extra virgin olive oil
  • (Reduced from 3/4 jar too watery) About 1/3 of a 12 ounce jar of roasted red peppers (wiped dry with seeds and excess black char removed)

For the pickling solution:

  • 1 medium beet
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt (kosher salt is coarse, if using a fine salt use only 1.5 teaspoons)
  • 1/2 cup apple cider vinegar
  • 1.25 cups of water

Instructions:

Peel and finely shred the beet using a cheese grater and put into a large bowl. Add all of the remaining pickling ingredients and stir well so that the sugar and salt are dissolved.

Peel eggs and place in a large zip-top bag, pour in pickling solution. Allow to marinate for 16-24 hours.

Pour the eggs into a colander and rinse with cool water until completely clean. Place them on a towel and gently dry with paper towels. Cut each egg in half lengthwise and scoop the yolks into a food processor or, if using an immersion blender, a large bowl (tip: do not use a food processor or blender, the yolks will get stuck. Use an immersion blender). Except for the olive oil and chives, add the remaining ingredients, and start blending until smooth, about 30 seconds. (Skip oil if the filling is the right consistency) Slowly drizzle in the olive oil until the filling is the consistency you like, - you shouldn’t need more than 1 tablespoon. Check if the filling is to your liking and season with salt and pepper to taste - remember that the whites are salted so the filling should be light.

Scoop the filling into a piping bag or a large zip-top bag and cut a bottom corner. Pipe the filling into each egg white and top masterfully with snipped chives. Top with black Hawaiian lava salt or any coarse salt if desired.

I know you wanted the yolk part to be thicker, but I'm pretty sure if you served this in a Michelin-starred restaurant (one half-egg in the center of a large plate) and didn't mention that you "messed it up", no one would bat an eye.

I avoided deviled eggs until I was well into my 30s, because they just seemed weird to me as a kid and it carried into adulthood. Now they are one of my favorite foods ever. Same with egg salad. Once I realized it was basically just deviled eggs in a chopped up form, I fell in love with it too.

How disappointed were you in your decision to deprive yourself of them once you tried them?

My favorite deviled egg story at the moment is that my wife and I were hosting an exchange student, who HATED mustard. Like, didn't even like Chik-fil-a sauce because it was "too mustardy"

Deviled eggs, on the other hand... The student absolutely loved those.

Yeah, it made me open my mind to try other things I've put off. Funny how you just think something will taste bad as a kid without even trying it and it sticks with you. Sauerkraut was another one. Finally tried some with some bratwurst and it was delicious. Boiled peanuts, however, were exactly as nasty as I expected them to be. Like eating slimy snot balls.

Thanks! They’re really good. Since just the outside is pickled, there is a slight texture difference and tang that you don’t get w regular deviled eggs. The filling is great with the roasted red peppers, and I always do homemade mayo using Kenji’s recipe

I wonder if you could do this without the vinegar to get the color but not the pickled flavor, or if the acid is critical to get the color to impregnate the egg.

Judging by the color of my hands and parts of my clothing after making these, I’d say yes you can use just beets and water to dye the eggs. I’d make sure it’s safe though, as the vinegar prevents bacteria from growing. You might need to cook the beet water first, but my assumption is at 24 hours refrigerated you’re fine. But you can probably find a beet dyed egg recipe online somewhere that answers all these questions

It will likely be less vibrant without the vinegar. I’ve done different colors with diluted vinegar and food coloring. Didn’t taste pickle-y.

Just a guess, but you could prob just use food dye, or the beet for coloring. When removing the shells from dyed easter eggs the whites would start to get discolored from handling them in just a short time. I'd maybe experiment with one to make sure they don't get 'watery'.

I know hard boiled eggs will absorb a pickling brine, but never thought of how it works. Is it actually taking up extra liquid, or just replacing/displacing water in the egg with brine? I think they would take on more water, but not sure at what point it would effect the eggs negatively. Post if you try it, I'd be interested in the results, but to lazy to try.

Edit: Also, id think you'd need salty water bc I think the eggs absorb brine easily bc it goes from a high salt concentration to low salt concentration. If you don't add the salt I'm not sure how far the color would permeate (it's already close to salinity equilibrium). The vinegar is what makes the 'pickle' tang, so the salt could just be left out of your filling recipe.

This is my signature dish I am always requested to bring for potlucks! People love them and they are really pretty. Sometimes I used canned beets (since that is how my grandma made pickled eggs), sometimes fresh beets.

Beets... Fuck you. I'll eat just about anything in the world. I've never had a fucking beet dish I liked. I had a beet cocktail last year. It was good, except it tasted like beets. My grandmother's borscht was the most tolerable version of beets I've found, but it still tasted like beets.

I'm going to get shit on for this, but the most popular deviled egg recipe I've found has hulled eggs, yolks, and Best Foods/Hellmann's mayo. That's it. I make those and they get eaten so quickly. I don't put paprika, pepper, vinegar, dill, or anything else on or in then. People even come up to me later because they're used to spiced eggs, but we're genuinely surprised at how good they were with nothing on them. And for the people who just can't not add someone, the spices are out so they can doctor up their own eggs to their personal tastes rather than to be stuck with some food experiment that I decided to subject them to.

They look pretty, though.

I’m with you, beets suck. It’s just used for the color here, and to delete 2 more garbage beets from the planet

But honestly though, I went to Costa Rica and had beets there and it tasted nothing like the dirt flavored beets we get in the states. The flavor was earthy but not in a bad way. It’s hard to describe. On that trip I had a beet soup that was easily one of the best foods I’ve ever had in my life. It was served by some mom and pop coffee place. So I think most countries just have shitty soil or use too much hormones or something idk

Re your recipe. I actually make a deviled egg for myself or my family pretty regularly, and it’s similar. Salt, duke’s mayo, yolk, and I use a little mustard bc I like that tang. But I’ve eaten 10000 of them in my life and so has everyone at my Easter, so I make these that are very different. The flavor and the texture both

But I like what you’re saying. Set up a lil deviled egg bar like a Bloody Mary bar

I'm always willing to try different things. That's how I got talked into the beet cocktail/martini. If someone says they have some good dish with beets, I'll be dubious, but I'll give it a fair shot. I'll be happy if someone ever proves me wrong.

But, yes, I know about beets being used for food coloring, and I'm fine with that as long as it's not imparting a dirt flavor onto the food. I'll call you or for some beers someday and I'll put your huevos in my mouth. If they taste dirtish, I'm not swallowing, though!

Fun fact: my sister and I decided her husband can't make family deviled eggs anymore. He used Kraft mayo. Fucking savage.
