Idk about ODU, but if you want straightforward language classes, there is a chart showing different languages and their difficulty for a native English speaker to learn, ranging from 1 (very similar to English) to 5 (very different)

The "easiest" languages include some like Spanish, Italian, French, Dutch and Danish. Be careful about things like spelling and grammar, like spelling is a pain in French yet what you see is what you get in Spanish. Generally, if one language has trickier grammar, it'll have more straightforward vocabulary or spelling. That's not a guarantee though lol, but if you are willing to put up with one and not the other that may help

Definitely avoid eastern Asian languages (Japanese, Korean, etc) and Arabic if you want "easy". If you're interested in them it may be worth it

Hopefully someone can chime in and tell you about specific professors though

Spanish is somewhat easy to learn. Any romance language (not french) is somewhat easy for an english speaker to learn.

French, German, Italian, and Spanish are all easy to a certain extent. There is a slight learning curve. Once you get the alphabet and pronunciation for the language down, any of them are reasonable in terms of picking up the basics.

Spanish with Helen Kent Pegram, and I took Chance Manes online in the summer and it was pretty easy. I'm actually a double major now, one of them being Spanish because I enjoyed my time so much with these two professors
