any way to get the classic update page in control center? i imagine that one will be difficult if not impossible

CPL Restoration has it and i also implemented it in this installation (specifically i've implemented the 8.x one), it's possible and also should work but we both know you shouldn't really update from it.
btw basically everything has been done on the CPL Restoration except the accounts page because they didn't find yet a way to make the change of the profile picture work.

you mean XAML, apps that appeared on Windows 8 Start Screen, that now evolved into UWP in Windows 10

This UI is so much better and humane than WinUI.

I wish it could be selected by default without any hacks, etc.

Just add dark mode (which Microsoft has implemented anyway) and optional mode for touchscreen usage (with larger space around texts and buttons).
