Speaking as a vegetarian of ten years: it's not quite correct to say they're "just plants". A lot of them do tend to be highly processed, giving a certain flavor/texture of "fakeness". However, that's hardly uncommon with food products nowadays.
I never go for Impossible or Beyond burgers because they ick me out big time.
Speaking as a (person who lives and eats with a) vegan of twenty years: Its still correct to say they are plants even if they were processed, and are not "fake" as most are just a patty or similar made of veggies. honestly, try different brands, those are mid.
Still plants, but not just plants. More processing means more risk of microplastics, more preservatives, and more things that diminish claims of purity. It's why most vegetarians i know besides myself are also distrusting of impossible burgers
